Turducken!

I was going through some old photos, and I came across this one: the first Turducken my family had. This was a few Thanksgivings ago, long before that bitch Katrina destroyed my family’s home and most of New Orleans. Does that not just look delicious?
The wonderful thing about Turducken is that, because it’s three boneless birds nested inside one another, you can cut the whole thing down the middle and see all the different, tasty elements. Notice the stuffing tot he left, the small chicken on the inside, turkey on the right, and that dark meat at the top is duck. Cut yourself off a juicy slice and you get all of that wonderful meat and stuffing. Top off your plate with some giblet gravy, and mais cher! you gonna pass a good time, cajun style.
And, oh yes, that’s the gizzard on the right side of the cutting board. Can’t forget that!
